GOT THE GOODS

Made from the ingredients on display by YOU KNOW WHO!

And you know where to come for the best!

At CHEF SHARON’S Animal-Free Kitchen! That’s where it all happens!

CANNED CRANBERRY SAUCE – one jellied and one whole.

Two brands: Ocean Spray and Our Family – both worked great by the way – together as it turns out!

Here we go:

SMOKY CRANBERRY ORANGE GRAVY fat free

If you’re looking for something different and familiar this is it! Plus you combine the cranberry and gravy into one dish, saving time and money. Did I mention how off-the-planet exciting cranberries can be when you recognize their potential? They’re just waiting to be explored!

Makes 3 cups

And what do we pour the gravy over? In this instance ROASTED YAM STEAKS, but why not try mashed potatoes, or stuffing? Put it over everything.

ROASTED YAM STEAKS – fat free

Tired of the same old mashed yams? Or the cubed and roasted style? Me too. Steve doesn’t like the texture. So what do I do with yams on sale? Try something new. Yam steaks! Pour the SMOKY CRANBERRY ORANGE GRAVY over, top with some pine nuts and a wonderful main dish event emerges to take over the table! I’m in. And Steve? Well, he ate the whole portion. Except for the pine nuts this dish is fat-free

Serves 6-8

FRIED IRISH POTATOES

Canned Irish potatoes pan-fried with green pepper, smoked paprika and rosemary, fresh garlic and ginger! Easy, quick and good!

Serves 4

3 T. liquid alternative butter or vegetable oil

2 c. diced green pepper (I used frozen – thaw, drain and squeeze to remove excess water from freezing)

2, 15 oz. cans Whole Irish Potatoes; drain well, cut into bite size pieces, then dry outside surfaces with paper towels, by lining bowl with several layers, and dropping in potato cubes, covering and shaking – I used Our Family brand

salt, pepper, smoked paprika, ground dried rosemary

fresh chopped garlic and ginger

ketchup or barbecue sauce

In large skillet, over medium heat, melt oil.

Add green pepper, salt to taste and saute till partially wilted.

Add dried potato cubes all at once in an even layer in the pan. Don’t stir or flip till bottom surface is golden brown.

While you wait, sprinkle tops of potato cubes evenly with salt, pepper, smoked paprika and ground rosemary – to taste

Flip the potatoes, stirring to evenly coat the spices and herb. Brown again by evenly distributing potatoes and waiting till they do their thing.

Raise heat to medium high for a short time to get an extra crisp on some cubes.

Add the fresh garlic and ginger during last 3-4 minutes of cooking.

Serve with ketchup or barbecue sauce.

Notes: This is how Steve likes his fried potatoes. Yes, he likes the canned ones. They are creamy and they don’t require much fuss nor time to make.

Onions good too with the peppers.
